Almond Butter Cookies

Serves: depends on size of cookie cutters


  • 2 cups oat flour [tip: grind 1 cup of oats in a blender/food processor!]
  • 2 teaspoons ground cinnamon
  • 1/8 teaspoon salt
  • 2 teaspoons baking powder
  • 2 whole eggs
  • 1/2 cup almond butter
  • 1/4 cup honey
  • Parchment paper


Do it:

  1. Preheat oven to 350ºF and line a baking sheet with parchment paper
  2. Add oat flour + ground cinnamon + salt + baking powder to a bowl and mix together
  3. Add both eggs + almond butter + honey to the same bowl and continue to mix until fully combined
  4. Chill dough in refrigerator for at least 30 minutes
  5. Roll out dough to about 1/4 inch thick. Use cookie cutters to cut into desired shapes
  6. Bake for 12-15 minutes or until cookies are golden brown on the bottom
