Trail Mix Banana Bread

Serves: 1 loaf

Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup salted sunflower seed butter [can sub for nut butter of choice; if your nut butter is unsalted then add salt to recipe]
  • 2 whole eggs
  • 1 tablespoon honey
  • 1/2 cup oat flour [tip: grind 1/2 c oats in blender or food processor!]
  • 1/4 cup ground golden flaxseeds
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons dark chocolate chips
  • 2 tablespoons white chocolate chips
  • 1/4 cup mixed nuts, chopped
  • 2 tablespoons dried cranberries
  • Extra chocolate chips + nuts + craisins for topping

 

Do it:

  1. Preheat oven to 385ºF and grease a bread pan
  2. In a small bowl, mash bananas and mix together with sunflower seed butter + eggs + honey
  3. In a larger bowl, whisk together oat flour + ground flaxseeds + baking powder
  4. Pour wet ingredients (step 2) into dry ingredients (step 3) and mix together until fully combined
  5. Stir in chocolate chips + nuts + dried cranberries
  6. Pour batter into the greased bread pan and bake for about 40 minutes before removing from oven and topping with a handful or two of chocolate chips + nuts + dried cranberries
  7. Place bread pan back in the oven and bake for an addition 10-15 minutes (~50-55 minutes total) or until toothpick comes out clean when inserted into the center. Remove from oven and let cool before removing the bread from pan and slicing
