Vegetarian Big Breakkie

Serves: 1


  • 1 large carrot, sliced
  • 1/2 cup butternut squash, chopped
  • Panch phoron spice blend
  • Olive oil
  • 2 veggie sausages
  • 2 free-range eggs
  • Za’atar spice blend
  • Kale
  • Sea Salt
  • Garlic Powder

Do it:

  1. Preheat oven to 425ºF
  2. Toss carrots + butternut squash in olive oil + panch phoron and place on an aluminum lined baking sheet. Bake for 20 minutes
  3. Meanwhile, heat skillet on medium-high and add oil
  4. Pan-fry veggie sausages until crispy before removing from heat and placing the sausages on a plate
  5. Using the same skillet, add more olive oil and turn the heat down to low-medium
  6. Crack two eggs onto the skillet and sprinkle with za’atar. Cover skillet and let cook for a just a few minutes so that the egg white is cooked but the yolk is still runny
  7. Remove eggs from the skillet and place on plate with sausages and baked carrots + squash
  8. Using the same skillet (again),  pan-fry kale in olive oil + sea salt + garlic powder. Remove from skillet just before kale browns and serve with the eggs + sausages + butternut + carrot
