Pumpkin Bread with Chocolate Chips + Walnuts

Serves: 1 loaf


  • 1 cup pumpkin purée
  • 1 banana, mashed
  • 1/2 cup almond butter
  • 2 whole eggs
  • 1 1/2 tablespoons honey
  • 1/2 cup oat flour
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • ~1/3 cup (+more for topping) walnuts, chopped
  • ~1/4 cup (+more for topping) chocolate chips


Do it:

  1. Preheat oven to 380ºF and grease a bread pan
  2. In a small bowl, mash banana with pumpkin purée and mix together with almond butter + eggs + honey
  3. In a larger bowl, whisk together oat flour + ground cinnamon + baking powder + salt
  4. Pour wet ingredients (step 2) into dry ingredients (step 3) and mix together until fully combined
  5. Stir in ~1/4 cup dark chocolate chips + ~1/3 cup chopped walnuts
  6. Pour batter into the greased bread pan and bake for bake for about 35 minutes before removing from oven and topping with a handful of chocolate chips + walnuts
  7. Place bread pan back in the oven and bake for an addition 10-15 minutes (~45-50 minutes total) or until toothpick comes out clean when inserted into the center. Remove from oven and let cool before removing the bread from pan and slicing
