Pumpkin Protein Pancakes

Serves: 2


  • 1/4 cup + 2 tablespoons coconut flour
  • 1 scoop vanilla protein powder
  • 2 scoops Further Food marine collagen peptides (use ‘BALANCEWITHLO10’ for 10% off your first purchase!) [optional: leaving out will not alter taste]
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 mashed bananas
  • 2 whole eggs
  • 2/3 cup pumpkin purée


Do it:

  1. Preheat a lightly greased griddle/pan over medium heat
  2. In a bowl, mix together coconut flour + protein powder + collagen peptides + cinnamon + baking powder + salt
  3. In a separate bowl, mash the bananas and combine with eggs + pumpkin purée
  4. Fold wet ingredients (those in step 3) into dry ingredients (those in step 2)
  5. Scoop the batter onto the griddle. Flip once pancake just begins to bubble and cook each side until they brown
  6. Serve immediately with your favorite pancake toppings
