Grain-Free Chocolate Chip Cookies

Serves: 12-15 cookies

Ingredients:

  • 1 can chickpeas
  • 1 egg
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup dark chocolate chips

Do it:

  1. Preheat oven to 350ºF and line a baking sheet with parchment paper
  2. Add chickpeas + egg + almond butter + honey + salt + baking powder to a food processor or blender and blend/process until fully combined
  3. Stir in chocolate chips
  4. Scoop cookie dough into balls and place on baking sheet
  5. Bake for 17-20 minutes or until cookies are golden brown on the bottom
