Collagen Chocolate Chip Banana Bread

Serves: 1 loaf

  • Coconut oil (for greasing)
  • 3 large, ripe bananas
  • 1/4 cup coconut flour
  • 4 scoops collagen peptides (I used Further Food marine collagen peptides; use ‘BALANCEWITHLO10’ for 10% off your first purchase!)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/2 cup nut butter of choice
  • 1/2 tablespoon honey (more if your bananas aren’t quite as ripe; I used Wedderspoon raw manuka honey)
  • 1/2 cup (+ more for sprinkling on top) shredded coconut flakes
  • 1/2 cup (+ more for sprinkling on top) dark chocolate chips (I used Ghiradelli 60% cocoa bittersweet chocolate chips)

Do it:

  1. Preheat oven to 350ºF and grease a bread pan with coconut oil
  2. Mash bananas and whisk together with coconut flour + marine collagen peptides + ground cinnamon + baking powder
  3. Add nut butter + honey + shredded coconut flakes
  4. Stir in 1/2 cup dark chocolate chips
  5. Pour batter into the greased bread pan and sprinkle with a handful of chocolate chips + a handful of shredded coconut
  6. Bake for 35-40 minutes or until toothpick comes out clean when inserted into the center. Let cool before removing from pan and slicing
