Loaded Breakfast Bagel

Serves: 1

Ingredients:

  • Extra virgin olive oil
  • 1 whole grain everything bagel
  • 1/3 cup cherry tomatoes, chopped
  • 1/2 cup brussel sprouts, chopped
  • 1/3 cup sugar snap peas
  • 1 small sweet bell pepper
  • 1/3 cup mushrooms, chopped
  • 2 whole eggs
  • 2 egg whites
  • Turmeric
  • Sage
  • Oregano
  • Rosemary
  • Sea Salt
  • 2-3 tablespoons roasted red pepper hummus

 

Do it:

  1. Heat a skillet on medium-high and coat with olive oil
  2. Mix whole eggs + egg whites in a dish and set side
  3. Sauté vegetables in olive oil with turmeric + sage + oregano + rosemary + sea salt
  4. When veggies just start to brown, pour eggs into the skillet and scramble
  5. Toast an everything bagel and smear with hummus
  6. Stuff the bagel with the veggies – you will have an overflow!IMG_3358
