Runny Eggs + Turmeric Cauli Rice

Serves: 1

Ingredients:

  • Olive oil
  • 1 cup cauliflower rice (buy pre-riced or throw florets in the blender/food processor to make rice)
  • 1 mini red bell pepper, chopped
  • 1/4 cup carrots, shredded
  • 1/2 cup sugar snap peas
  • Turmeric
  • Garlic Powder
  • Sea salt
  • 2 free-range eggs
  • Black Pepper
  • Sea Salt

Do it:

  1. Heat skillet on medium-high and add oil
  2. Add cauliflower rice + chopped mini bell pepper + shredded carrots + sugar snap peas to the skillet and sautΓ© with turmeric + garlic powder + sea salt for a few minutes
  3. Remove cauli rice + veggie mix from heat and set aside on a plate
  4. Using the same skillet, add more olive oil and turn the heat down to low-medium
  5. Crack two eggs onto the skillet and sprinkle with black pepper + sea salt. Cover skillet and let cook for a just a few minutes so that the egg white is cooked but the yolk is still runny
  6. Remove eggs from the skillet and place on top of cauliflower rice + veggie mix
