Sweet Potato + Parsnip Fries with Hummus

Serves: 1-2

Ingredients:

  • 1 small-medium sweet potato
  • 1 parsnip
  • Olive oil
  • Za’atar spice blend
  • Hummus (I used lemon & coriander hummus)

Do it:

  1. Preheat oven to 425ºF and coat and aluminum lined baking tray with olive oil
  2. Cut up sweet potato and parsnip in strips and toss with olive oil and za’atar spice blend
  3. Place on tray and bake for 25 minutes, flipping halfway through to make them extra crispy
  4. Once they’re done, remove from heat and dunk in hummus
