1-Bowl Superfood Muffins


  • Coconut oil (for greasing)
  • 3 large, ripe bananas
  • 1/2 cup nut butter of choice
  • 1/4 cup spelt flour
  • 1/4 cup coconut flour
  • 2 tablespoons honey
  • 2 eggs
  • 2 tablespoons milk (I used unsweetened vanilla almond milk)
  • 1/3 cup blueberries (fresh or frozen)
  • 1/3 cup raspberries (fresh or frozen)
  • 1/4 teaspoon baking powder
  • Splash of vanilla
  • Large handful of dark chocolate chips

Do it:

  1. Preheat oven to 380ΒΊF and grease a muffin pan with coconut oil
  2. Mash bananas and combine with all ingredients EXCEPT the chocolate chips
  3. Pour batter into the muffin pan and bake for 20 minutes or until toothpick comes out clean when inserted into the center of a muffin
  4. Let cool for a few minutes before removing from the pan and setting aside
  5. Place the chocolate chips in a ziplock bag and heat in the microwave until melted (~60-90 seconds; be careful not to burn them!)
  6. Cut one corner of the ziplock bag, squeeze chocolate to the corner and drizzle on the muffins
