Ingredients:
- 1 medium sweet potato
- Coconut oil
- Greek yogurt
- Chocolate protein sauce
- 2 tablespoons peanut flour
- 1/2 scoop chocolate protein powder (I used My Protein Natural Chocolate Whey Protein Powder; use ‘thelodown’ for 10% off)
- 1 tablespoon milk of choice
- Cocoa Rice Krispies
- Frozen blueberries
Do it:
- Preheat oven to 415°F and line a baking sheet with aluminum foil
- Pierce sweet potato with a fork (~5 times) and brush with coconut oil
- Bake potato for 40-50 minutes or until crispy on the outside and soft on the inside
- Let sweet potato cool before storing in an airtight container in the fridge overnight (can be made a few days in advance)
- For the chocolate protein sauce: mix protein powder + peanut flour + almond milk in a small bowl
- Mash sweet potato and layer in a jar with yogurt, chocolate protein sauce, cocoa Rice Krispies and frozen blueberries
