Busy Morning Sweet Potato Parfait

Ingredients: 

  • 1 medium sweet potato
  • Coconut oil
  • Greek yogurt
  • Chocolate protein sauce
    • 2 tablespoons peanut flour
    • 1/2 scoop chocolate protein powder (I used My Protein Natural Chocolate Whey Protein Powder; use ‘thelodown’ for 10% off)
    • 1 tablespoon milk of choice
  • Cocoa Rice Krispies
  • Frozen blueberries

Do it:

  1. Preheat oven to 415°F and line a baking sheet with aluminum foil
  2. Pierce sweet potato with a fork (~5 times) and brush with coconut oil
  3. Bake potato for 40-50 minutes or until crispy on the outside and soft on the inside
  4. Let sweet potato cool before storing in an airtight container in the fridge overnight (can be made a few days in advance)
  5. For the chocolate protein sauce: mix protein powder + peanut flour + almond milk in a small bowl
  6. Mash sweet potato and layer in a jar with yogurt, chocolate protein sauce, cocoa Rice Krispies and frozen blueberries
